Pineapple fluff

Ingredients:

  • 1 can (20 oz) crushed pineapple, drained (or use fresh pineapple chunks, chopped)
  • 1 box (Sugar-Free) vanilla instant pudding mix (3.4 oz box)
  • 1 cup plain non-fat Greek yogurt (for a creamy, protein-packed base)
  • 1 cup light whipped topping (like Cool Whip Lite)
  • 1/2 cup mini marshmallows (optional, for added sweetness and texture)
  • 1/2 tsp vanilla extract (optional, for extra flavor)
  • 1-2 tbsp stevia or your preferred sweetener (optional, for added sweetness)

Instructions:

1. Prepare the Pineapple:

  • Drain the crushed pineapple in a fine mesh strainer to remove excess liquid. You can also use fresh pineapple if you prefer, but make sure to chop it into small, bite-sized pieces.

2. Mix the Pudding:

  • In a large mixing bowl, combine the instant vanilla pudding mix with the Greek yogurt and vanilla extract. Stir well until smooth.

3. Combine the Ingredients:

  • Gently fold in the whipped topping and drained pineapple into the pudding mixture. If you’re adding mini marshmallows, fold them in as well.
  • Taste the mixture, and if you want a sweeter fluff, add a tablespoon or two of stevia or another sweetener to your liking.

4. Chill and Serve:

  • Refrigerate the pineapple fluff for at least 1 hour to let the flavors meld together and the texture firm up a bit.
  • Once chilled, stir it gently before serving. You can garnish with a few extra mini marshmallows or a sprinkle of shredded coconut if you like.

  • On the Blue and Purple plans, this dessert can be around 2-3 points per serving (based on 8 servings), depending on the specific ingredients you use. Using sugar-free pudding and light whipped topping helps keep the points low. If you omit the marshmallows, the points will be even lower.
