Pizza baked chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup of your favorite low-sugar marinara sauce
  • 1 cup part-skim mozzarella cheese, shredded
  • 1/4 cup sliced black olives
  • 1/4 cup sliced green bell peppers
  • 1/4 cup sliced red onions
  • 1/4 cup sliced mushrooms
  • 1/4 cup turkey pepperoni slices (optional)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, dried oregano, and garlic powder.
  3. Heat a non-stick skillet over medium-high heat. Lightly spray it with cooking spray. Sear the chicken breasts for about 2-3 minutes on each side or until they are lightly browned.
  4. Transfer the seared chicken breasts to a baking dish.
  5. Spread a tablespoon of marinara sauce on each chicken breast.
  6. Top each chicken breast with mozzarella cheese.
  7. Add the sliced olives, bell peppers, red onions, mushrooms, and turkey pepperoni (if using) on top of the cheese.
  8. Spoon the remaining marinara sauce over the toppings.
  9. Bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the cheese is bubbly and golden brown.
