Potatoes with meatballs and cheese
Ingredients:
- 4 large potatoes, peeled and sliced into thin rounds
- 1 pound ground beef or pork
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1 egg, beaten
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- Olive oil for cooking
Instructions:
- Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.
- In a large mixing bowl, combine the ground meat, onion, garlic, breadcrumbs, egg, dried oregano, dried basil, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
- Shape the meat mixture into small meatballs, about 1 inch in diameter.
- Heat some olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 6-8 minutes. Remove the meatballs from the skillet and set aside.
- In the same skillet, add a bit more olive oil if needed, and add the sliced potatoes. Cook the potatoes until they are lightly browned and tender, about 5-7 minutes per side. Remove from heat.
- Arrange half of the potato slices in the bottom of the prepared baking dish, overlapping slightly.
- Place the cooked meatballs on top of the potato layer.
- Sprinkle half of the shredded mozzarella cheese and half of the grated Parmesan cheese over the meatballs.
- Pour the marinara sauce evenly over the cheese and meatball layer.
- Arrange the remaining potato slices on top of the sauce layer.
- Sprinkle the remaining mozzarella and Parmesan cheese over the potatoes.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden brown and the potatoes are tender.
- Once done, remove from the oven and let it cool for a few minutes before serving.
