PUMPKIN FLUFF | WEIGHT WATCHERS

Ingredients:

  • 1 can (15 oz) canned pumpkin puree (make sure it’s pure pumpkin, not pumpkin pie filling)
  • 1 cup fat-free Greek yogurt or fat-free plain yogurt
  • 1 cup fat-free whipped topping (such as Cool Whip Free)
  • 1-2 tablespoons powdered sugar or a sugar substitute to taste (adjust to your sweetness preference)
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice (or a mixture of cinnamon, nutmeg, and cloves)
  • Optional toppings: crushed graham crackers or crushed low-fat gingersnap cookies (for added flavor and texture)

Instructions:

  1. In a large mixing bowl, combine the canned pumpkin, Greek yogurt, and vanilla extract. Mix until well combined.
  2. Add the pumpkin pie spice and powdered sugar (or sugar substitute) to the mixture. Adjust the sweetness and spice level to your liking. You can add more or less sugar as needed.
  3. Gently fold in the fat-free whipped topping until the mixture is smooth and well combined.
  4. Transfer the pumpkin fluff into individual serving dishes or a larger serving bowl.
  5. Chill the pumpkin fluff in the refrigerator for at least 1-2 hours before serving to allow the flavors to meld and the dessert to firm up.
