Ingredients:
- 1 package (about 16 ounces) frozen pierogies (any flavor)
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup bacon bits (optional)
- 1/4 cup unsalted butter, melted
- 2 tablespoons chopped green onions (optional)
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- Cook the pierogies according to the package instructions. Drain them well.
- In a large mixing bowl, combine the sour cream, half of the shredded cheddar cheese, and half of the bacon bits. Season with salt and pepper to taste.
- Gently fold the cooked pierogies into the sour cream mixture until well coated.
- Transfer the pierogie mixture to a greased baking dish.
- In a small bowl, mix the melted butter with the remaining shredded cheddar cheese.
- Drizzle the butter and cheese mixture over the top of the pierogies in the baking dish.
- Sprinkle the remaining bacon bits on top.
- Bake in the preheated oven for about 25-30 minutes or until the casserole is heated through and the cheese is melted and bubbly.
- Remove from the oven and sprinkle chopped green onions on top, if desired.
- Let it cool for a few minutes before serving.
