Quick n Easy Pierogi Casserole Recipe

Ingredients:

  • 1 package (about 16 ounces) frozen pierogies (any flavor)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup bacon bits (optional)
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons chopped green onions (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pierogies according to the package instructions. Drain them well.
  3. In a large mixing bowl, combine the sour cream, half of the shredded cheddar cheese, and half of the bacon bits. Season with salt and pepper to taste.
  4. Gently fold the cooked pierogies into the sour cream mixture until well coated.
  5. Transfer the pierogie mixture to a greased baking dish.
  6. In a small bowl, mix the melted butter with the remaining shredded cheddar cheese.
  7. Drizzle the butter and cheese mixture over the top of the pierogies in the baking dish.
  8. Sprinkle the remaining bacon bits on top.
  9. Bake in the preheated oven for about 25-30 minutes or until the casserole is heated through and the cheese is melted and bubbly.
  10. Remove from the oven and sprinkle chopped green onions on top, if desired.
  11. Let it cool for a few minutes before serving.
