Red Lentil Bread

Ingredients:
2 cups red lentils (soaked in water overnight)
1 cup plant-based milk/yogurt
3 tbsps ground flax
1/3 cup water or plant-based milk
15 g baking powder
1 tsp salt
60 ml olive oil
Instructions
– Mix ground flax with 1/3 cup water or plant based milk and let sit for a few minutes.
– Drain water from lentils.
– Blend all the ingredients, including flax mixture, in a food processor.
– Pour into greased baking pan. I used 2-8×8×2 baking pans with parchment paper instead of greasing the bottom.
– Bake at 355 degrees for about 30 minutes. It should be ready if you stick a fork or knife in it and it comes out dry.
