Ingredients
1 medium potato, peeled
1 medium carrot, peeled
1 medium onion, peeled
1/2 cup raw cashews
4 Tbs nooch
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
1/4 tsp ground mustard
1/4 tsp paprika
1Tbs lemon juice
1lb elbows or fusilli
Cube and boil the veggies and cashews until the potatoes are a little softer than fork tender (I do about 15 minutes). Put the veggies and cashews into the blender. Add your nooch and seasonings. Pour a couple ladles full of the cooking water into the blender. Blend until very smooth. Pour it over your cooked pasta. Add lemon juice and stir together.
I’ve made it twice this week (hence the different types of pasta in the pictures, lol). Obviously, I like to add broccoli, but it’s great on its own too. I’ve never wanted to try a recipe pole this, with the potato and carrot base as I just believed it couldn’t taste good or produce something that resembles a mac and cheese, but it does and it does. I think that even omnis would like it. It reheats well also.
