Ingredients:
- Ripe bananas (the riper, the sweeter)
- Whole wheat flour or a mix of whole wheat and all-purpose flour
- Baking powder
- Baking soda
- Unsweetened applesauce (to replace some or all of the oil)
- Zero or low-fat plain Greek yogurt
- Egg whites or egg substitute
- Sugar substitute or a small amount of honey or maple syrup
- Cinnamon, vanilla extract, or other flavorings for taste
Instructions:
- Preheat your oven to the desired temperature (usually around 350°F or 175°C).
- In a large bowl, mash the ripe bananas until smooth.
- Add the egg whites or egg substitute and mix well.
- Stir in the unsweetened applesauce and Greek yogurt. These ingredients will add moisture without much added fat.
- In another bowl, combine the dry ingredients: whole wheat flour, baking powder, baking soda, and any other dry ingredients like cinnamon or salt.
- Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can make the bread or muffins tough.
- Add your preferred sweetener, whether it’s a sugar substitute, honey, or maple syrup, to taste.
- Pour the batter into a greased loaf pan for banana bread or muffin tins for muffins.
- Bake until a toothpick inserted into the center comes out clean. The baking time will depend on the size of your muffins or loaf but is usually around 20-30 minutes for muffins and 45-60 minutes for banana bread.
- Let your banana bread or muffins cool before slicing and serving.
