Skinny Banana Bread or Muffins – 2 point.


  • Ripe bananas (the riper, the sweeter)
  • Whole wheat flour or a mix of whole wheat and all-purpose flour
  • Baking powder
  • Baking soda
  • Unsweetened applesauce (to replace some or all of the oil)
  • Zero or low-fat plain Greek yogurt
  • Egg whites or egg substitute
  • Sugar substitute or a small amount of honey or maple syrup
  • Cinnamon, vanilla extract, or other flavorings for taste


  1. Preheat your oven to the desired temperature (usually around 350°F or 175°C).
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the egg whites or egg substitute and mix well.
  4. Stir in the unsweetened applesauce and Greek yogurt. These ingredients will add moisture without much added fat.
  5. In another bowl, combine the dry ingredients: whole wheat flour, baking powder, baking soda, and any other dry ingredients like cinnamon or salt.
  6. Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can make the bread or muffins tough.
  7. Add your preferred sweetener, whether it’s a sugar substitute, honey, or maple syrup, to taste.
  8. Pour the batter into a greased loaf pan for banana bread or muffin tins for muffins.
  9. Bake until a toothpick inserted into the center comes out clean. The baking time will depend on the size of your muffins or loaf but is usually around 20-30 minutes for muffins and 45-60 minutes for banana bread.
  10. Let your banana bread or muffins cool before slicing and serving.
