Ingredients:
For the Smash Burgers:
- 1 pound ground beef (80/20 blend)
- Salt and pepper, to taste
- American cheese slices
For the Quesadillas:
- Large flour tortillas
- Shredded Mexican cheese blend
- Diced tomatoes
- Chopped onions
- Chopped pickles
- Ketchup and mustard (optional)
- Olive oil or butter for cooking
Instructions:
Smash Burgers:
- Preheat the Griddle or Skillet: Preheat a griddle or skillet over medium-high heat.
- Divide and Shape the Beef: Divide the ground beef into small portions (e.g., golf ball-sized). Place each portion on the hot griddle or skillet.
- Smash the Burgers: Immediately smash each portion with a spatula to create thin patties. Season with salt and pepper.
- Cook the Burgers: Cook the patties for about 2-3 minutes on each side or until they develop a crispy, brown crust.
- Add Cheese: Place a slice of American cheese on each patty during the last minute of cooking to allow it to melt.
- Remove and Rest: Remove the smash burgers from the griddle and let them rest for a minute.
Quesadillas:
- Assemble Quesadillas: Place a large tortilla on a clean surface. On one half of the tortilla, add a layer of shredded Mexican cheese blend, diced tomatoes, chopped onions, and pickles.
- Add Smash Burgers: Place one or two smash burgers on top of the veggies.
- Optional Sauces: If desired, drizzle ketchup and mustard over the burgers.
- Fold and Cook: Fold the tortilla over the filling to create a half-moon shape. In a clean skillet or on the griddle, add a bit of olive oil or butter over medium heat. Cook the quesadilla on each side until golden brown and the cheese is melted.
- Slice and Serve: Remove from heat, slice the quesadilla into wedges, and serve immediately.
