Sweet Potato Fritters with Black Bean Salsa

Sweet Potato Fritters with Black Bean Salsa

Ingredients

For the Sweet Potato Fritters:

  • 2 medium sweet potatoes, peeled and grated
  • 1/2 cup all-purpose flour (or gluten-free flour)
  • 1/4 cup cornmeal
  • 1/4 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for frying)
  • Fresh cilantro, for garnish (optional)

For the Black Bean Salsa:

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cherry tomatoes, diced
  • 1/2 red onion, finely chopped
  • 1 small jalapeño, seeds removed and diced (optional, for heat)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

  1. Prepare the Black Bean Salsa: In a medium bowl, combine the black beans, diced tomatoes, red onion, jalapeño (if using), and cilantro. Squeeze lime juice over the mixture, season with salt and pepper, and stir to combine. Set aside to let the flavors meld.
  2. Make the Sweet Potato Fritters: In a large bowl, combine the grated sweet potatoes, flour, cornmeal, green onions, garlic, cumin, paprika, salt, and pepper. Mix until well combined. If the mixture feels too wet, you can add a little more flour until it holds together.
  3. Heat the Oil: In a large skillet, heat olive oil over medium heat.
  4. Form and Cook the Fritters: Using a tablespoon or your hands, form the sweet potato mixture into small patties (about 2-3 inches in diameter). Carefully place them in the hot skillet, making sure not to overcrowd the pan. Cook for 3-4 minutes on each side or until golden brown and crispy. Remove the fritters and place them on a paper towel-lined plate to absorb excess oil.
  5. Serve: Arrange the fritters on a serving platter and top with the black bean salsa. Garnish with fresh cilantro if desired. Serve warm.

Tips

  • Baking Option: For a healthier version, you can bake the fritters at 400°F (200°C) on a parchment-lined baking sheet for 20-25 minutes, flipping halfway through until golden brown.
  • Additions: Feel free to add spices like chili powder or herbs like oregano to the fritter mixture for extra flavor.
  • Storage: Leftover fritters can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven or skillet to regain crispiness.
