Ingredients:
- 1 lb lean ground turkey or beef
- 1 packet taco seasoning mix (choose a low-sodium and low-sugar option)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 cup salsa
- 1 cup reduced-fat shredded cheddar cheese
- 1 can (16.3 oz) refrigerated biscuits (like Pillsbury Grands!)
- Chopped fresh cilantro, green onions, and diced tomatoes for garnish (optional)
Instructions:
- Preheat your oven to the temperature specified on the biscuit package.
- In a large skillet, cook the lean ground turkey or beef over medium heat until fully cooked. Drain any excess fat.
- Add the taco seasoning mix to the cooked meat according to the package instructions. Stir well.
- In a large mixing bowl, combine the seasoned meat, black beans, corn, salsa, and shredded cheddar cheese. Mix well.
- Cut each biscuit into quarters.
- Gently fold the biscuit pieces into the meat mixture until they are evenly coated.
- Transfer the mixture to a greased casserole dish.
- Bake in the preheated oven according to the biscuit package instructions or until the biscuits are golden brown and cooked through.
- Once out of the oven, let it cool for a few minutes before serving.
- Garnish with chopped fresh cilantro, green onions, and diced tomatoes if desired.
