Taco fiesta bubble up casserole

Ingredients:

  • 1 lb lean ground turkey or beef
  • 1 packet taco seasoning mix (choose a low-sodium and low-sugar option)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 cup salsa
  • 1 cup reduced-fat shredded cheddar cheese
  • 1 can (16.3 oz) refrigerated biscuits (like Pillsbury Grands!)
  • Chopped fresh cilantro, green onions, and diced tomatoes for garnish (optional)

Instructions:

  1. Preheat your oven to the temperature specified on the biscuit package.
  2. In a large skillet, cook the lean ground turkey or beef over medium heat until fully cooked. Drain any excess fat.
  3. Add the taco seasoning mix to the cooked meat according to the package instructions. Stir well.
  4. In a large mixing bowl, combine the seasoned meat, black beans, corn, salsa, and shredded cheddar cheese. Mix well.
  5. Cut each biscuit into quarters.
  6. Gently fold the biscuit pieces into the meat mixture until they are evenly coated.
  7. Transfer the mixture to a greased casserole dish.
  8. Bake in the preheated oven according to the biscuit package instructions or until the biscuits are golden brown and cooked through.
  9. Once out of the oven, let it cool for a few minutes before serving.
  10. Garnish with chopped fresh cilantro, green onions, and diced tomatoes if desired.
