WeightWatcher Teriyaki Chicken

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil

For the Teriyaki Sauce:

  • 1/2 cup soy sauce
  • 1/4 cup sake (or white wine)
  • 1/4 cup mirin (a sweet rice wine)
  • 1/4 cup sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger

Instructions:

  1. Start by preparing the teriyaki sauce. In a saucepan, combine the soy sauce, sake (or white wine), mirin, sugar, minced garlic, and grated ginger. Heat the mixture over medium heat, stirring until the sugar dissolves. Once the sugar has dissolved, reduce the heat and let the sauce simmer for about 10-15 minutes, or until it thickens. Remove it from the heat and set it aside.
  2. Season the chicken pieces with salt and pepper.
  3. In a large skillet or frying pan, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook until they are browned and cooked through. This should take about 5-7 minutes.
  4. Pour the prepared teriyaki sauce over the cooked chicken. Stir to coat the chicken pieces evenly with the sauce.
  5. Let the chicken and sauce simmer together for a few minutes, allowing the flavors to meld and the sauce to thicken further.
  6. Once the sauce has thickened to your desired consistency and the chicken is fully coated, remove the pan from the heat.
  7. Serve your homemade teriyaki chicken over a bed of steamed rice and garnish with sesame seeds and chopped green onions if desired.

You can also customize your teriyaki chicken by adding vegetables like broccoli, bell peppers, or carrots to the dish. Adjust the thickness of the sauce to your liking by simmering it for more or less time. Enjoy your homemade teriyaki chicken!
