Vegan Apple Pie Cream Cheese Roll

Ingredients:

  • 2 cups chopped apples
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup vegan cream cheese
  • 1 sheet of puff pastry, thawed
  • 1 tablespoon non-dairy milk
  • 1 tablespoon granulated sugar
  • Powdered sugar for dustingInstructions:
    1. Preheat your oven to 375°F.
    2. In a medium-sized bowl, combine the chopped apples, lemon juice, maple syrup, cinnamon, and nutmeg. Mix well and set aside.
    3. Soften the vegan cream cheese by leaving it out at room temperature for 15-20 minutes or microwaving it for 15-20 seconds.
    4. Roll out the puff pastry on a lightly floured surface to a rectangle shape about 1/4 inch thick.
    5. Spread the softened cream cheese evenly over the puff pastry, leaving about 1/2 inch border around the edges.
    6. Spoon the apple mixture on top of the cream cheese and spread it evenly.
    7. Roll up the puff pastry tightly starting at one of the long edges, and seal the edge with a little bit of water.
    8. Brush the top of the roll with non-dairy milk and sprinkle granulated sugar over it.
    9. Cut the roll into slices, about 1 inch thick.
    10. Place the slices onto a baking sheet lined with parchment paper and bake for 25-30 minutes or until golden brown.
    11. Dust with powdered sugar and serve warm.
