Ingredients:
- 2 cups chopped apples
- 1 tablespoon lemon juice
- 1 tablespoon maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup vegan cream cheese
- 1 sheet of puff pastry, thawed
- 1 tablespoon non-dairy milk
- 1 tablespoon granulated sugar
- Powdered sugar for dustingInstructions:
- Preheat your oven to 375°F.
- In a medium-sized bowl, combine the chopped apples, lemon juice, maple syrup, cinnamon, and nutmeg. Mix well and set aside.
- Soften the vegan cream cheese by leaving it out at room temperature for 15-20 minutes or microwaving it for 15-20 seconds.
- Roll out the puff pastry on a lightly floured surface to a rectangle shape about 1/4 inch thick.
- Spread the softened cream cheese evenly over the puff pastry, leaving about 1/2 inch border around the edges.
- Spoon the apple mixture on top of the cream cheese and spread it evenly.
- Roll up the puff pastry tightly starting at one of the long edges, and seal the edge with a little bit of water.
- Brush the top of the roll with non-dairy milk and sprinkle granulated sugar over it.
- Cut the roll into slices, about 1 inch thick.
- Place the slices onto a baking sheet lined with parchment paper and bake for 25-30 minutes or until golden brown.
- Dust with powdered sugar and serve warm.
