Ingredients:

  • 1 can (15 oz) artichoke hearts, drained and chopped (or about 1 1/2 cups fresh artichokes, steamed and chopped)
  • 1 can (15 oz) white beans (such as cannellini or great northern beans), drained and rinsed
  • 1/4 cup tahini (or vegan sour cream for a creamier texture)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 2 tablespoons nutritional yeast (for a cheesy flavor)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 2-3 tablespoons olive oil (or water for a lighter option)
  • 1/4 cup fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Prepare the Ingredients:
    • If you’re using canned artichokes, drain them and chop them into smaller pieces. If using fresh artichokes, steam and chop them.
