Ingredients:
1 cup rolled oats
1 ripe banana, mashed
1 cup plant-based milk (such as almond, soy, or oat milk)
2 tablespoons maple syrup or agave syrup
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
Pinch of salt
Optional toppings: sliced fruit, nuts, seeds, or coconut flakes
Instructions:
Preheat your oven to 350°F (175°C). Grease a small baking dish or oven-safe ramekin with a little oil or cooking spray.
In a mixing bowl, combine the rolled oats, mashed banana, plant-based milk, maple syrup, vanilla extract, cinnamon, and salt. Stir until well combined.
Pour the oat mixture into the prepared baking dish.
Bake in the preheated oven for about 25-30 minutes, or until the oats are set and the top is lightly golden brown.
Remove from the oven and let cool for a few minutes before serving.
Serve the baked oats warm, topped with your favorite toppings such as sliced fruit, nuts, seeds, or coconut flakes.
