VEGAN BANANA BREAD

Ingredients:

  • 3 ripe bananas, mashed (about 1 1/4 cups)
  • 1/2 cup coconut sugar or brown sugar
  • 1/4 cup melted coconut oil or vegetable oil
  • 1/4 cup unsweetened almond milk (or any plant milk)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour (or a 1:1 gluten-free flour blend)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or vegan chocolate chips (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper for easy removal.
  2. Mix Wet Ingredients: In a large bowl, combine the mashed bananas, sugar, melted coconut oil, almond milk, and vanilla extract. Stir until well blended.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  4. Combine Wet and Dry Ingredients: Gently fold the dry ingredients into the wet ingredients, being careful not to overmix. Stir until just combined. Fold in the chopped walnuts or chocolate chips if using.
  5. Pour and Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover loosely with foil halfway through baking.
  6. Cool and Serve: Let the banana bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy warm or at room temperature.

  • Use Overripe Bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be. Look for bananas with plenty of brown spots.
  • Add Extra Flavor: Try adding a pinch of nutmeg or a handful of shredded coconut for a flavor twist.
  • Storage: Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. You can also freeze slices for up to 2 months.
