Ingredients:
For the burger patties:
  • 1 can of black beans, drained and rinsed
  • 1/2 cup of cooked brown rice
  • 1/4 cup of bread crumbs
  • 1/4 cup of chopped onion
  • 1/4 cup of chopped green pepper
  • 1 tablespoon of soy sauce
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste
For the special sauce:
  • 1/4 cup of vegan mayo
  • 2 tablespoons of vegan Thousand Island dressing
  • 1 tablespoon of yellow mustard
  • 1 tablespoon of finely chopped onion
  • 1 tablespoon of sweet pickle relish
For the burger assembly:
  • 4 vegan hamburger buns
  • Vegan cheddar cheese, sliced
  • Lettuce, shredded
  • Pickles, sliced
  • Onion, sliced
Instructions:
  1. Preheat your oven to 375°F.
  2. To make the burger patties, combine all the ingredients in a food processor and blend until the mixture is smooth.
  3. Divide the mixture into four equal portions and form each portion into a patty shape.
  4. Place the patties on a baking sheet lined with parchment paper and bake in the oven for 20-25 minutes, flipping them over halfway through.
  5. While the patties are cooking, make the special sauce by combining all the ingredients in a small bowl and mixing well.
  6. Toast the hamburger buns.
  7. Assemble the burgers by placing a slice of vegan cheddar cheese on the bottom bun, followed by a cooked patty, a dollop of special sauce, shredded lettuce, sliced pickles, sliced onion, and another slice of vegan cheddar cheese.
  8. Place the top bun on the burger and enjoy your vegan Big Mac!
