Vegan Cabbage Patties

Ingredients:

  • 4 cups shredded cabbage
  • 1 cup grated carrots
  • 1 cup cooked quinoa
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro or parsley
  • 1/4 cup flaxseed meal (mixed with 1/2 cup water, set aside to gel)
  • 1/2 cup breadcrumbs (gluten-free if needed)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil for frying

Instructions:

  1. In a large mixing bowl, combine the shredded cabbage, grated carrots, cooked quinoa, chopped onion, minced garlic, cilantro or parsley, and the flaxseed meal mixture.
  2. Add the breadcrumbs, ground cumin, smoked paprika, salt, and pepper to the mixture. Mix well until everything is evenly combined.
  3. Allow the mixture to rest for about 10-15 minutes to let the flaxseed meal gel and bind the ingredients together.
  4. Heat olive oil in a large skillet over medium heat.
  5. Shape the mixture into patties using your hands. Make sure each patty holds together well.
  6. Place the patties in the hot skillet and cook for 4-5 minutes on each side, or until they are golden brown and crispy.
  7. Once the patties are cooked, transfer them to a plate lined with paper towels to absorb any excess oil.
  8. Serve the Vegan Cabbage Patties with your favorite dipping sauce or in a bun as a burger.
