Vegan Cabbage Patties
Ingredients:
- 4 cups shredded cabbage
- 1 cup grated carrots
- 1 cup cooked quinoa
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh cilantro or parsley
- 1/4 cup flaxseed meal (mixed with 1/2 cup water, set aside to gel)
- 1/2 cup breadcrumbs (gluten-free if needed)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil for frying
Instructions:
- In a large mixing bowl, combine the shredded cabbage, grated carrots, cooked quinoa, chopped onion, minced garlic, cilantro or parsley, and the flaxseed meal mixture.
- Add the breadcrumbs, ground cumin, smoked paprika, salt, and pepper to the mixture. Mix well until everything is evenly combined.
- Allow the mixture to rest for about 10-15 minutes to let the flaxseed meal gel and bind the ingredients together.
- Heat olive oil in a large skillet over medium heat.
- Shape the mixture into patties using your hands. Make sure each patty holds together well.
- Place the patties in the hot skillet and cook for 4-5 minutes on each side, or until they are golden brown and crispy.
- Once the patties are cooked, transfer them to a plate lined with paper towels to absorb any excess oil.
- Serve the Vegan Cabbage Patties with your favorite dipping sauce or in a bun as a burger.
