Vegan Cabbage Rolls
Ingredients:
- 1 large cabbage head
- 1 cup cooked rice (white or brown)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked lentils or chickpeas, mashed slightly
- 1 cup tomato sauce or marinara sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups vegetable broth or water
- 2 tablespoons olive oil
Instructions:
- Prepare the Cabbage:
- Bring a large pot of water to a boil. Carefully remove the core from the cabbage head.
- Place the whole cabbage head into the boiling water and let it cook for about 5-7 minutes, or until the outer leaves are soft and pliable.
- Remove the cabbage from the water and carefully peel off the softened leaves. Set aside.
- Prepare the Filling:
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant.
- Add the cooked rice, mashed lentils or chickpeas, thyme, oregano, salt, and pepper to the skillet. Stir well to combine.
- Cook the mixture for another 3-5 minutes, allowing the flavors to meld together. Remove from heat and let it cool slightly.
- Assemble the Cabbage Rolls:
- Take one cabbage leaf at a time and place a spoonful of the filling mixture onto the center of the leaf.
- Fold the sides of the leaf over the filling, then roll it up tightly, similar to rolling a burrito. Repeat with the remaining leaves and filling.
- Cook the Cabbage Rolls:
- In a large pot or Dutch oven, spread a thin layer of tomato sauce or marinara sauce on the bottom.
- Place the cabbage rolls seam-side down into the pot, arranging them snugly.
- Pour the remaining tomato sauce or marinara sauce over the cabbage rolls.
- Pour vegetable broth or water into the pot until the cabbage rolls are partially submerged.
- Cover the pot and bring it to a simmer over medium-low heat. Let the cabbage rolls cook for about 30-40 minutes, or until the cabbage is tender and the filling is heated through.
- Serve:
- Carefully remove the cabbage rolls from the pot and transfer them to a serving dish.
- Serve hot, garnished with fresh herbs if desired.
