Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
1/2 cup natural peanut butter
1/4 cup pure maple syrup
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup vegan chocolate chips
Instructions:
Preheat oven to 350°F.
In a food processor, combine chickpeas, peanut butter, maple syrup, and vanilla extract until smooth.
Add baking powder, baking soda, and salt, and pulse until well combined.
Transfer the mixture to a bowl and stir in chocolate chips.
Using a cookie scoop or spoon, drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
Bake for 12-15 minutes, or until lightly golden brown around the edges.
Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
