Vegan Chili

Vegan Chili
This is my yummy vegan chili-
2 tablespoons olive oil
1 large yellow onion, diced
2 medium carrots, diced
2 stalks celery, diced
2 cloves garlic, minced
2 tablespoons chili powder
2 tablespoon smoked cumin
2 teaspoons dried oregano
salt & pepper to taste
1/4 teaspoon cinnamon
2 tbsp cocoa powder
1 (28-ounce) can crushed tomatoes
3 (15- to 15.5-ounce) cans beans, such as pinto, black, white kidney
1 cup corn
1 cup butternut squash
1/2 cup dried cranberries
1/2 cup kale leaves
– sauté veggies & add spices, crushed tomato,add 2 cups water( i use empty can)
add rinsed beans, bring to boil then simmer couple hours-
enjoy!!
