Ingredients:
2 cups all-purpose flour
1 cup granulated sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 cup vegetable oil
1 cup unsweetened applesauce
1 tsp vanilla extract
1 cup diced apples
For the topping:
1/4 cup all-purpose flour
1/4 cup brown sugar
1/4 cup vegan butter, melted
1 tsp cinnamon
Instructions:
Preheat your oven to 350°F (180°C). Grease a 9-inch cake pan and set aside.
In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
In a separate large bowl, mix together the vegetable oil, applesauce, and vanilla extract.
Slowly add the dry ingredients to the wet ingredients, stirring until just combined.
Fold in the diced apples.
Pour the batter into the prepared cake pan.
In a small bowl, mix together the flour, brown sugar, melted vegan butter, and cinnamon until well combined.
Sprinkle the topping evenly over the cake batter.
Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Allow the cake to cool before slicing and serving.
