- 2 cups all-purpose flour

- 1 cup brown sugar (make sure it’s vegan-friendly)
- 1/2 cup granulated white sugar
- 1/2 cup chopped walnuts (ensure they are vegan)
- 2 flax eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons water, let it sit for 5 minutes to thicken)
- 1 tablespoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Directions:
- Preheat your oven to 350°F (175°C) and lightly grease a 9-inch round cake pan.
- In a medium bowl, mix together the flax eggs (flaxseed and water). Allow it to sit for 5 minutes to thicken.
- Add the applesauce (or vegetable oil for a higher-fat version), brown sugar, white sugar, ground cinnamon, and vanilla extract to the flax eggs. Mix until well combined.
- Stir in the all-purpose flour, baking soda, baking powder, and salt. Mix until the batter is thoroughly incorporated.
- Fold in the chopped apples and the walnuts.
- Pour the batter into the prepared cake pan.
- Bake until a toothpick inserted into the center comes out clean, about 45 minutes.
- Let the cake cool for 15 minutes before slicing and serving.
