Vegan Cinnamon Apple Cake

Ingredients:

  • 2 cups all-purpose flour
  • 1 large apple, peeled and chopped
  • 1 cup vegetable oil or unsweetened applesauce (for a lower-fat option)
  • 1 cup brown sugar (make sure it’s vegan-friendly)
  • 1/2 cup granulated white sugar
  • 1/2 cup chopped walnuts (ensure they are vegan)
  • 2 flax eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons water, let it sit for 5 minutes to thicken)
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Directions:

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch round cake pan.
  2. In a medium bowl, mix together the flax eggs (flaxseed and water). Allow it to sit for 5 minutes to thicken.
  3. Add the applesauce (or vegetable oil for a higher-fat version), brown sugar, white sugar, ground cinnamon, and vanilla extract to the flax eggs. Mix until well combined.
  4. Stir in the all-purpose flour, baking soda, baking powder, and salt. Mix until the batter is thoroughly incorporated.
  5. Fold in the chopped apples and the walnuts.
  6. Pour the batter into the prepared cake pan.
  7. Bake until a toothpick inserted into the center comes out clean, about 45 minutes.
  8. Let the cake cool for 15 minutes before slicing and serving.
