Vegan Cinnamon Rolls Peach Cobbler

Ingredients:
For the Cinnamon Rolls:
1 package (2 1/4 teaspoons) active dry yeast
1 cup warm almond milk (or any plant-based milk)
1/4 cup vegan butter, melted
1/4 cup organic cane sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
3 cups all-purpose flour, plus more for dusting
2 tablespoons ground cinnamon
1/4 cup vegan butter, softened
For the Peach Cobbler Filling:
4-5 ripe peaches, peeled and sliced
1/4 cup organic cane sugar
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
2 tablespoons cornstarch
For the Cobbler Topping:
1 cup all-purpose flour
1/4 cup organic cane sugar
1/4 cup vegan butter, softened
Pinch of salt
Instructions:
In a large mixing bowl, dissolve the yeast in warm almond milk. Let it sit for 5 minutes until frothy.
Add melted vegan butter, organic cane sugar, vanilla extract, and salt to the yeast mixture. Stir to combine.
Gradually add the flour, 1 cup at a time, stirring until a soft dough forms.
Turn the dough out onto a floured surface and knead for about 5 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
While the dough is rising, prepare the peach cobbler filling. In a mixing bowl, combine sliced peaches, organic cane sugar, lemon juice, ground cinnamon, nutmeg, and cornstarch. Toss until the peaches are coated evenly. Set aside.
Preheat your oven to 350°F (175°C). Grease a baking dish with vegan butter.
Roll out the risen dough on a floured surface into a rectangle, about 1/4 inch thick.
Spread softened vegan butter evenly over the dough, then sprinkle with ground cinnamon.
Starting from one long edge, tightly roll up the dough into a log. Cut the log into 12 equal slices.
Arrange the cinnamon rolls in the greased baking dish, leaving some space between each roll.
Spoon the prepared peach cobbler filling around the cinnamon rolls, distributing it evenly.
In a small bowl, prepare the cobbler topping by mixing flour, organic cane sugar, softened vegan butter, and a pinch of salt until crumbly. Sprinkle the topping over the peach cobbler filling.
Bake in the preheated oven for 25-30 minutes, or until the cinnamon rolls are golden brown and the peach filling is bubbly.
