2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 cups almond milk (or any other non-dairy milk)
2 tablespoons vegetable oil
1 teaspoon vanilla extract
Vegan butter or oil for frying
Instructions:
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate mixing bowl, whisk together the almond milk, vegetable oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Heat a non-stick skillet or griddle over medium heat.
Add a small amount of vegan butter or oil to the skillet to prevent sticking.
Pour 1/4 cup of batter onto the skillet for each pancake.
Cook until the edges are dry and the surface of the pancake has small bubbles, about 2-3 minutes.
Flip the pancake and cook for an additional 1-2 minutes until the other side is golden brown.
Repeat with the remaining batter, adding more vegan butter or oil to the skillet as needed.
