Ingredients:

For the Pastry:

  • 2 1/2 cups all-purpose flour
  • 1 cup vegan butter, chilled and cubed
  • 1/2 cup cold water
  • 1/2 teaspoon salt

For the Filling:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 1 carrot, peeled and diced
  • 1 cup mushrooms, finely chopped
  • 1 cup vegan ground meat substitute (soy crumbles, lentils, or your choice)
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste

Instructions:

  1. Prepare the Pastry:
    • In a large bowl, combine the flour and salt. Add the chilled and cubed vegan butter. Using a pastry cutter or your hands, work the butter into the flour until the mixture resembles breadcrumbs.
    • Gradually add the cold water, mixing until the dough comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
  2. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  3. Make the Filling:
    • In a skillet, heat olive oil over medium heat. Sauté onions and garlic until softened.
    • Add potatoes, carrots, and mushrooms. Cook until the vegetables are tender. Add the vegan ground meat substitute and cook until browned.
    • Stir in tomato paste, soy sauce, dried thyme, salt, and black pepper. Cook for an additional 2-3 minutes. Remove from heat and let it cool.
  4. Assemble the Bridies:
    • On a floured surface, roll out the chilled pastry into 4 circles.
    • Spoon the filling onto one half of each pastry circle, leaving space around the edges. Fold the other half over the filling, creating a half-moon shape. Press the edges to seal.
  5. Bake:
    • Place the bridies on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.
  6. Serve:
