Vegan Forfar Bridies

Ingredients:
For the Pastry:
- 2 1/2 cups all-purpose flour
- 1 cup vegan butter, chilled and cubed
- 1/2 cup cold water
- 1/2 teaspoon salt
For the Filling:
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 1 carrot, peeled and diced
- 1 cup mushrooms, finely chopped
- 1 cup vegan ground meat substitute (soy crumbles, lentils, or your choice)
- 2 tablespoons tomato paste
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- Salt and black pepper, to taste
Instructions:
- Prepare the Pastry:
- In a large bowl, combine the flour and salt. Add the chilled and cubed vegan butter. Using a pastry cutter or your hands, work the butter into the flour until the mixture resembles breadcrumbs.
- Gradually add the cold water, mixing until the dough comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Make the Filling:
- In a skillet, heat olive oil over medium heat. Sauté onions and garlic until softened.
- Add potatoes, carrots, and mushrooms. Cook until the vegetables are tender. Add the vegan ground meat substitute and cook until browned.
- Stir in tomato paste, soy sauce, dried thyme, salt, and black pepper. Cook for an additional 2-3 minutes. Remove from heat and let it cool.
- Assemble the Bridies:
- On a floured surface, roll out the chilled pastry into 4 circles.
- Spoon the filling onto one half of each pastry circle, leaving space around the edges. Fold the other half over the filling, creating a half-moon shape. Press the edges to seal.
- Bake:
- Place the bridies on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.
- Serve:
