Cook Time: 15 minutes
Total Time: 35 minutes
Ingredients:
- 1 large eggplant, peeled and sliced into 1/2-inch medallions
- 1 cup unsweetened almond milk or any plant-based milk
- 1 cup all-purpose flour
- 1 cup breadcrumbs (ensure they are vegan)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- Cooking oil for frying
Instructions:
- Prepare the Eggplant:
- Peel the eggplant and slice it into 1/2-inch medallions.
- Set up Dredging Stations:
- In three separate bowls, set up a dredging station. Place flour in one bowl, almond milk in another, and combine breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper in the third bowl.
- Dredge the Eggplant:
- Dip each eggplant medallion into the flour, ensuring it’s fully coated. Then, dip it into the almond milk, and finally, coat it with the breadcrumb mixture.
- Heat the Oil:
- In a large skillet, heat cooking oil over medium-high heat.
- Fry the Eggplant:
- Fry the dredged eggplant medallions until they are golden brown on each side, about 2-3 minutes per side. Work in batches to avoid overcrowding the pan.
- Drain Excess Oil:
- Place the fried eggplant on a paper towel-lined plate to drain any excess oil.
- Serve:
- Serve the Vegan Fried Eggplant Medallions hot, and enjoy them with your favorite dipping sauce.
Note: You can customize the seasoning in the breadcrumb mixture according to your taste preferences. Additionally, you can bake the eggplant medallions for a healthier alternative.
