  • 1/2 tsp cinnamon (optional, for extra warmth)

  • 1 tbsp fresh lemon or lime juice (for balance)
  • Chopped fresh cilantro or parsley, for garnish (optional)
  • Toasted sesame seeds (optional, for a little crunch)

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the sweet potatoes: Peel and cube the sweet potatoes into 1-inch chunks. Place them on the baking sheet in a single layer.
  3. Season the potatoes: Drizzle the olive oil over the sweet potatoes. Sprinkle the grated fresh ginger, maple syrup, cinnamon (if using), salt, and pepper over the potatoes. Toss everything together to coat evenly.
