Ingredients:
For the Cake:
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup coconut oil, melted
- 1/2 cup unsweetened applesauce
- 1/3 cup almond milk
- 1/3 cup powdered Erythritol or your preferred vegan sweetener
- 1 teaspoon vanilla extract
For the Coconut Topping:
- 2 cups shredded coconut (unsweetened)
- 1/4 cup coconut oil, melted
- 1/4 cup full-fat coconut milk
- 1/3 cup powdered Erythritol or your preferred vegan sweetener
- 1 teaspoon vanilla extract
For the Chocolate Ganache:
- 1/2 cup coconut milk
- 1/2 cup vegan chocolate chips
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and line a square baking pan.
- Prepare the Cake:
- In a large bowl, whisk together almond flour, coconut flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together melted coconut oil, applesauce, almond milk, powdered Erythritol, and vanilla extract.
- Combine wet and dry ingredients, mixing until well combined. Pour the batter into the prepared pan and smooth the top.
- Bake the Cake:
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.
- Prepare the Coconut Topping:
- In a bowl, mix shredded coconut, melted coconut oil, coconut milk, powdered Erythritol, and vanilla extract. Spread this mixture evenly over the cooled cake.
- Make the Chocolate Ganache:
- In a small saucepan, heat coconut milk until hot but not boiling. Remove from heat and add vegan chocolate chips. Stir until smooth. Let it cool slightly.
- Add the Chocolate Ganache:
- Drizzle the chocolate ganache over the coconut topping.
- Chill and Serve:
- Place the cake in the refrigerator to allow the coconut topping and chocolate ganache to set. Once set, slice and serve.
