Ingredients:

For the Cake:

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup coconut oil, melted
  • 1/2 cup unsweetened applesauce
  • 1/3 cup almond milk
  • 1/3 cup powdered Erythritol or your preferred vegan sweetener
  • 1 teaspoon vanilla extract

For the Coconut Topping:

  • 2 cups shredded coconut (unsweetened)
  • 1/4 cup coconut oil, melted
  • 1/4 cup full-fat coconut milk
  • 1/3 cup powdered Erythritol or your preferred vegan sweetener
  • 1 teaspoon vanilla extract

For the Chocolate Ganache:

  • 1/2 cup coconut milk
  • 1/2 cup vegan chocolate chips

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and line a square baking pan.
  2. Prepare the Cake:
    • In a large bowl, whisk together almond flour, coconut flour, cocoa powder, baking powder, baking soda, and salt.
    • In another bowl, whisk together melted coconut oil, applesauce, almond milk, powdered Erythritol, and vanilla extract.
    • Combine wet and dry ingredients, mixing until well combined. Pour the batter into the prepared pan and smooth the top.
  3. Bake the Cake:
    • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.
  4. Prepare the Coconut Topping:
    • In a bowl, mix shredded coconut, melted coconut oil, coconut milk, powdered Erythritol, and vanilla extract. Spread this mixture evenly over the cooled cake.
  5. Make the Chocolate Ganache:
    • In a small saucepan, heat coconut milk until hot but not boiling. Remove from heat and add vegan chocolate chips. Stir until smooth. Let it cool slightly.
  6. Add the Chocolate Ganache:
    • Drizzle the chocolate ganache over the coconut topping.
  7. Chill and Serve:
    • Place the cake in the refrigerator to allow the coconut topping and chocolate ganache to set. Once set, slice and serve.
