VEGAN MUSHROOM PHILLY

Ingredients:
2 tablespoons olive oil
1 large onion, sliced
3 cloves garlic, minced
1 red bell pepper, sliced
8 ounces mushrooms, sliced
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper, to taste
4 sub rolls
Vegan cheese slices (optional)
Instructions:
Heat the olive oil in a large skillet over medium heat. Add the onions and garlic and sauté until the onions are translucent, about 5 minutes.
Add the red bell pepper and mushrooms to the skillet and sauté until the mushrooms are tender and the peppers are slightly softened, about 10 minutes.
Add the smoked paprika, garlic powder, onion powder, salt, and pepper to the skillet and stir to combine.
Slice the sub rolls in half and toast them in the oven or a toaster oven.
Assemble the sandwiches by placing the mushroom and pepper mixture on the bottom half of the roll. If desired, add a slice of vegan cheese on top.
