Ingredients:
1 cup cooked brown rice
1/2 cup kimchi cucumbers, diced
1/4 cup homemade hummus
2-3 leaves romaine lettuce, chopped
Sesame seeds, for garnish
Directions:
In a bowl, combine the cooked brown rice, diced kimchi cucumbers, and chopped romaine lettuce.
Add a generous spoonful of homemade hummus on top of the rice mixture.
Sprinkle with sesame seeds and serve.
Vegan Kimchi Cucumber and Brown Rice Salad with Homemade Hummus Dressing Ingredients:
2 cups cooked brown rice
1 cup kimchi cucumbers, sliced
2-3 leaves romaine lettuce, chopped
1/4 cup homemade hummus
2 tbsp apple cider vinegar
1 tbsp soy sauce
1 tbsp maple syrup
1 tbsp sesame oil
Salt and pepper, to taste
Directions:
In a large bowl, combine the cooked brown rice, sliced kimchi cucumbers, and chopped romaine lettuce.
In a separate bowl, whisk together the homemade hummus, apple cider vinegar, soy sauce, maple syrup, sesame oil, salt, and pepper to make the dressing.
Pour the dressing over the rice mixture and toss well to combine. Serve chilled.
Vegan Brown Rice and Kimchi Wraps with Homemade Hummus Ingredients:
4 large romaine lettuce leaves
2 cups cooked brown rice
1 cup kimchi cucumbers, sliced
1/4 cup homemade hummus
1 avocado, sliced
Directions:
Lay the romaine lettuce leaves flat on a cutting board.
Divide the cooked brown rice, sliced kimchi cucumbers, and sliced avocado evenly among the lettuce leaves.
Add a generous spoonful of homemade hummus to each wrap.
Roll up the wraps tightly and serve immediately.
