Vegan Sausage Penne Recipe
Ingredients:
8 oz penne pasta
2 tbsp olive oil
2 vegan sausages, sliced
1 onion, chopped
3 garlic cloves, minced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 can of diced tomatoes
1 tsp dried basil
1 tsp dried oregano
Salt and pepper, to taste
1 cup of vegetable broth
1/4 cup of vegan parmesan cheese, for serving
Instructions:
Cook the penne pasta according to the instructions on the package. Reserve 1 cup of pasta water. Drain the pasta and set aside.
In a large pan, heat the olive oil over medium heat. Add the sliced vegan sausages and cook until they are browned, about 5 minutes. Remove the sausages from the pan and set aside.
In the same pan, add the onion, garlic, red and yellow bell peppers, and cook until they are soft and translucent, about 5 minutes.
Add the diced tomatoes, dried basil, dried oregano, salt, and pepper to the pan. Stir to combine.
Add the vegetable broth to the pan and let it simmer for 5 minutes.
Add the cooked vegan sausages back to the pan and stir to combine.
Add the cooked penne pasta to the pan and stir to combine. If the sauce is too thick, add a bit of the reserved pasta water to thin it out.
Serve the vegan sausage and penne pasta with a sprinkle of vegan parmesan cheese on top. Enjoy
