Ingredients:
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup vegan butter, cold and cubed
- 1/2 cup plant-based milk (such as almond, soy, or oat), plus more for brushing
- 1 tsp vanilla extract
- Optional add-ins: 1/2 cup fresh or frozen berries, chocolate chips, or chopped nuts
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix the Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the Vegan Butter: Add the cold, cubed vegan butter to the flour mixture. Use a pastry cutter or your hands to cut the butter into the flour until the mixture resembles coarse crumbs.
- Add the Wet Ingredients: In a separate bowl, mix together the plant-based milk and vanilla extract. Pour this mixture into the flour mixture, stirring gently until just combined. Be careful not to overmix. If using add-ins like berries or chocolate chips, fold them in at this stage.
- Shape the Dough: Turn the dough onto a lightly floured surface and gently shape it into a disc about 1 inch thick. Cut the disc into 8 wedges and place them on the prepared baking sheet.
- Brush and Bake: Brush the tops of the scones with a little extra plant-based milk for a golden finish. Bake for 18-20 minutes or until the scones are golden brown and firm to the touch.
- Serve: Allow the scones to cool slightly on a wire rack. Serve warm with vegan butter, jam, or a drizzle of glaze if desired.
These vegan scones are wonderfully customizable – try adding fresh lemon zest for a citrus twist or a dash of cinnamon for warmth. They’re best enjoyed fresh but can be stored in an airtight container for up to 2 days. Enjoy!
