VEGAN SPEECHLESS

Ingredients:
1 block of firm tofu, drained and pressed
2 tablespoons of cornstarch
1 tablespoon of vegetable oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 small onion, sliced
2 cloves of garlic, minced
1 tablespoon of grated ginger
2 tablespoons of soy sauce
1 tablespoon of sriracha sauce (or to taste)
Salt and pepper to taste
Chopped scallions and sesame seeds for garnish
Instructions:
Cut the tofu into small cubes and toss with cornstarch until evenly coated.
Heat the vegetable oil in a large skillet over medium-high heat.
Add the tofu cubes to the skillet and cook until golden brown and crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
Add the sliced bell peppers and onion to the skillet and cook for about 3-4 minutes until slightly softened.
Add the minced garlic and grated ginger to the skillet and cook for an additional 1-2 minutes until fragrant.
Add the soy sauce and sriracha sauce to the skillet and stir to combine.
Add the cooked tofu back into the skillet and stir to coat with the sauce.
Cook for an additional 2-3 minutes until everything is heated through.
Season with salt and pepper to taste.
Serve hot with chopped scallions and sesame seeds on top.
