VEGAN SPINACH CHEESE TRIANGLES

Ingredients:
2 cups of flour
1/2 tsp of salt
1 tsp of baking powder
1/4 tsp of garlic powder
1/4 tsp of onion powder
1 cup of cold vegan butter or margarine
2 tbsp of ice water
1 cup of chopped spinach
1 cup of vegan shredded cheese
1 tbsp of olive oil
Instructions:
In a large bowl, mix together the flour, salt, baking powder, garlic powder, and onion powder.
Cut in the cold vegan butter or margarine using a pastry cutter or your hands until the mixture resembles coarse crumbs.
Gradually add the ice water to the mixture, stirring until it forms a dough. Divide the dough into two portions, wrap each portion in plastic wrap and refrigerate for at least 30 minutes.
Preheat the oven to 375°F.
In a pan over medium heat, heat the olive oil. Add the chopped spinach and cook until wilted, about 3-5 minutes.
Roll out one portion of the dough on a floured surface to about 1/8 inch thick. Cut the dough into 3-inch squares.
Place a spoonful of cooked spinach on each square, followed by a sprinkle of vegan shredded cheese.
Fold the squares into triangles, pressing the edges together to seal. Place the triangles on a baking sheet lined with parchment paper.
Bake for 20-25 minutes or until the triangles are golden brown.
