Yield: Approximately 12 rolls
Prep Time: 2 hours 30 minutes (includes rising time)
Bake Time: 15 minutes
Total Time: 2 hours 45 minutes
Ingredients:
For the Rolls:
- 1 cup unsweetened almond milk (or any plant-based milk), warmed to about 110°F (43°C)
- 2 1/4 teaspoons (1 packet) active dry yeast
- 1/4 cup granulated sugar
- 4 tablespoons vegan butter, melted
- 3 to 3 1/2 cups all-purpose flour
- 1 teaspoon salt
For the Cinnamon Sugar Butter:
- 4 tablespoons vegan butter, softened
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions:
- Activate Yeast:
- In a bowl, combine warmed almond milk and sugar. Sprinkle yeast over the mixture and let it sit for 5-10 minutes until it becomes frothy.
- Prepare Dough:
- In a large mixing bowl, combine the yeast mixture, melted vegan butter, salt, and gradually add in the flour while mixing. Knead until a soft dough forms. If needed, add more flour until the dough is smooth and elastic.
- First Rise:
- Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-1.5 hours or until it doubles in size.
- Shape Rolls:
- Preheat the oven to 350°F (175°C). Punch down the risen dough and divide it into 12 equal pieces. Shape each piece into a ball and place them in a greased baking dish.
- Second Rise:
- Cover the rolls and let them rise again for about 30 minutes.
- Bake:
- Bake in the preheated oven for approximately 15 minutes or until the rolls are golden brown.
- Prepare Cinnamon Sugar Butter:
- While the rolls are baking, mix softened vegan butter, granulated sugar, and ground cinnamon in a bowl to create the cinnamon sugar butter.
- Brush and Serve:
- Once the rolls are done, brush them with the cinnamon sugar butter while they’re still warm.
