Vegan Vegetable Pie

Ingredients:
For the Pie Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup vegan butter, chilled and cubed
- 1/4 cup ice-cold water
- 1/2 teaspoon salt
For the Filling:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 1 cup vegan cheese, shredded (use your favorite vegan cheese)
- Salt and black pepper, to taste
For the Custard:
- 1 1/2 cups unsweetened almond milk or any plant-based milk
- 2 tablespoons chickpea flour
- 2 tablespoons nutritional yeast
- 1/2 teaspoon turmeric powder
- Salt and black pepper, to taste
Instructions:
- Prepare the Pie Crust:
- In a food processor, combine the flour, chilled vegan butter, and salt. Pulse until the mixture resembles coarse crumbs.
- Add ice-cold water gradually while pulsing, just until the dough comes together.
- Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Roll Out the Crust:
- On a floured surface, roll out the pie crust to fit a pie dish. Place the crust in the dish, trimming and crimping the edges as needed.
- Make the Custard:
- In a bowl, whisk together almond milk, chickpea flour, nutritional yeast, turmeric powder, salt, and black pepper. Set aside.
