Ingredients:

For the Pie Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup vegan butter, chilled and cubed
  • 1/4 cup ice-cold water
  • 1/2 teaspoon salt

For the Filling:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 1 cup vegan cheese, shredded (use your favorite vegan cheese)
  • Salt and black pepper, to taste

For the Custard:

  • 1 1/2 cups unsweetened almond milk or any plant-based milk
  • 2 tablespoons chickpea flour
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon turmeric powder
  • Salt and black pepper, to taste

Instructions:

  1. Prepare the Pie Crust:
    • In a food processor, combine the flour, chilled vegan butter, and salt. Pulse until the mixture resembles coarse crumbs.
    • Add ice-cold water gradually while pulsing, just until the dough comes together.
    • Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  3. Roll Out the Crust:
    • On a floured surface, roll out the pie crust to fit a pie dish. Place the crust in the dish, trimming and crimping the edges as needed.
  4. Make the Custard:
    • In a bowl, whisk together almond milk, chickpea flour, nutritional yeast, turmeric powder, salt, and black pepper. Set aside.
