Ingredients:

  • 1 large head of cauliflower, leaves removed
  • 2-3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 tablespoon Dijon mustard
  • Juice of 1 lemon
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet or roasting pan with parchment paper.
  2. Prepare the Cauliflower: Rinse the cauliflower and trim the base to remove any tough stem parts, leaving the core intact to hold it together.
  3. Make the Marinade: In a small bowl, whisk together the olive oil, smoked paprika, cumin, garlic powder, onion powder, Dijon mustard, lemon juice, salt, and black pepper until well combined.
  4. Coat the Cauliflower: Place the cauliflower head on the prepared baking sheet. Pour the marinade over the cauliflower, using your hands or a brush to rub it evenly over the entire head, making sure to get into all the crevices.
  5. Roast the Cauliflower: Cover the cauliflower with foil to help it cook evenly. Roast for 40-50 minutes, then remove the foil and roast for an additional 15-20 minutes, or until the cauliflower is golden brown and tender when pierced with a fork.
  6. Garnish and Serve: Remove from the oven and let it cool slightly. Garnish with fresh parsley or cilantro for a burst of color and extra flavor. Slice into wedges and serve with a side of vegan tahini sauce, garlic aioli, or a squeeze of lemon.

Tips:

  • Cooking Time: Depending on the size of your cauliflower, cooking times may vary. For larger heads, you may need an extra 10-15 minutes.
  • Add Extra Flavor: For a spicier version, add a pinch of cayenne pepper or chili powder to the marinade.
  • Serving Ideas: Serve alongside rice, quinoa, or roasted vegetables for a complete meal.

Whole-roasted cauliflower makes a beautiful and hearty plant-based dish that’s full of bold, smoky flavors. It’s a great alternative to a traditional roast and an impressive addition to any meal!
