Vegetable Alfredo Angel Hair Pasta with Jerk Seasoning

Ingredients:
8 oz angel hair pasta (regular or hearts of palm pasta)
1 medium zucchini, thinly sliced
1 medium yellow squash, thinly sliced
1 cup raw cashews, soaked in water for at least 4 hours or overnight
2 cloves garlic, minced
1 cup vegetable broth
2 tablespoons nutritional yeast
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon Bragg Sprinkle herbs and spices (or your favorite herb blend)
1 teaspoon Jerk seasoning (adjust to taste)
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Cook the angel hair pasta according to the package instructions until al dente. If using hearts of palm pasta, follow the package instructions for cooking.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Add the sliced zucchini and yellow squash to the skillet. Cook for 5-7 minutes, or until the vegetables are tender but still crisp.
In a blender, combine the soaked cashews, vegetable broth, nutritional yeast, lemon juice, Bragg Sprinkle herbs and spices, Jerk seasoning, salt, and pepper. Blend until smooth and creamy.
Pour the creamy sauce into the skillet with the cooked vegetables. Stir well to combine and heat through.
Once the sauce is heated through, add the cooked angel hair pasta to the skillet. Toss until the pasta is well coated with the sauce and vegetables.
Remove from heat and garnish with chopped fresh parsley.
