Vegetable Croquettes
Ingredients:
- 2 cups mixed vegetables (carrots, peas, corn, green beans), finely chopped or grated
- 1 cup mashed potatoes
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs
- 1/4 cup grated cheese (optional)
- 2 tablespoons chopped fresh parsley or cilantro
- 1 teaspoon cumin powder
- 1/2 teaspoon paprika or chili powder (adjust to taste)
- Salt and pepper to taste
- 1/4 cup all-purpose flour
- 1/4 cup milk or water
- Oil for frying
Instructions:
- Steam or boil the mixed vegetables until they are tender. Drain any excess water and let them cool down.
- In a large mixing bowl, combine the cooked mixed vegetables, mashed potatoes, chopped onion, minced garlic, breadcrumbs, grated cheese (if using), chopped parsley or cilantro, cumin powder, paprika or chili powder, salt, and pepper. Mix well until everything is evenly combined.
- Shape the mixture into small cylindrical or oval-shaped croquettes.
- In a shallow dish, mix the all-purpose flour with milk or water to make a smooth batter.
- Dip each croquette into the flour batter, ensuring it’s well coated.
- Heat oil in a frying pan over medium heat. Once the oil is hot, carefully place the coated croquettes into the oil, making sure not to overcrowd the pan.
- Fry the croquettes until they are golden brown and crispy on all sides, turning them occasionally to ensure even cooking.
- Once done, remove the croquettes from the oil and place them on a plate lined with paper towels to drain any excess oil.
- Serve the vegetable croquettes hot with your favorite dipping sauce or chutney.
