Veggie Cake Recipe
Ingredients:
- 2 cups grated zucchini
- 1 cup grated cauliflower
- 4 eggs
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh herbs (such as parsley, basil, or thyme)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Cooking spray or olive oil for greasing

Instructions:
- Preheat your oven to 375°F (190°C). Grease a cake pan or a baking dish with cooking spray or olive oil.
- In a large bowl, combine the grated zucchini, grated cauliflower, almond flour, Parmesan cheese, chopped fresh herbs, garlic powder, onion powder, salt, and pepper. Mix well to combine.
- In a separate bowl, beat the eggs until well mixed. Then, add the beaten eggs to the vegetable mixture and stir until everything is evenly combined.
- Pour the mixture into the greased cake pan or baking dish, spreading it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the cake is set in the middle.
