Veggie Dumplings and Ramen
Ingredients:
- 1 package of vegan dumpling wrappers (or make your own dough using flour and water)
- 2 cups finely chopped vegetables (cabbage, carrots, mushrooms, green onions, etc.)
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- 1 tablespoon vegetable oil (for frying)
Vegan Ramen Ingredients:
- 4 cups vegetable broth
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons soy sauce
- 1 tablespoon miso paste
- 1 tablespoon sesame oil
- 200g ramen noodles
- Toppings (sliced green onions, tofu, nori, sesame seeds, etc.)
Instructions:
Vegan Veggie Dumplings:
- In a large bowl, mix together the finely chopped vegetables, garlic, ginger, soy sauce, sesame oil, salt, and pepper.
- Place a small spoonful of the vegetable mixture in the center of each dumpling wrapper.
- Moisten the edges of the wrapper with water and fold in half, pressing the edges to seal.
- Heat vegetable oil in a large skillet over medium heat. Place the dumplings in the skillet and cook until the bottoms are golden brown, about 2-3 minutes.
- Carefully pour 1/4 cup of water into the skillet and immediately cover with a lid to steam the dumplings. Cook for about 5 minutes, until the wrappers are translucent and the filling is cooked through.
- Remove the lid and let any remaining water evaporate. Serve hot with dipping sauce.
Vegan Ramen:
- In a large pot, bring the vegetable broth to a simmer over medium heat.
- Add minced garlic, grated ginger, soy sauce, miso paste, and sesame oil to the broth. Stir well to combine and let it simmer for another 5-10 minutes to allow the flavors to meld.
- Meanwhile, cook the ramen noodles according to the package instructions. Drain and set aside.
- Once the broth is ready, taste and adjust seasoning if necessary.
- To serve, divide the cooked ramen noodles into bowls and ladle the hot broth over them.
- Add your desired toppings such as sliced green onions, tofu, nori, sesame seeds, etc.
- Serve hot and enjoy your vegan ramen!
