Ingredients:
- 1 cup all-purpose flour (you can use whole wheat flour or almond flour for a healthier option)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter (or a healthier oil or butter alternative)
- 1/4 cup granulated sugar (or a sugar substitute like Stevia or erythritol)
- 1/4 cup brown sugar (or a sugar substitute)
- 1 large egg (or an egg substitute like applesauce or mashed banana)
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips (use mini chocolate chips for better distribution)
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a larger bowl, beat the butter (or butter alternative), granulated sugar, and brown sugar together until well combined and creamy.
- Add the egg (or egg substitute) and vanilla extract to the wet ingredients and mix until incorporated.
- Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
- Fold in the dark chocolate chips.
- Drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes or until the edges are lightly golden. Be careful not to overbake; the cookies will continue to cook a bit as they cool.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
