weight watcher CHOCOLATE CHIP COOKIES.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup light butter or margarine (such as a butter substitute like Smart Balance)
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar substitute (e.g., Splenda or Stevia)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium-sized bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, and salt. Set this dry mixture aside.
  3. In another bowl, using an electric mixer, beat together the applesauce, light butter or margarine, brown sugar, and granulated sugar substitute until well combined and creamy.
  4. Add the egg and vanilla extract to the wet mixture and continue to beat until everything is well combined.
  5. Gradually add the dry mixture to the wet mixture, mixing until a cookie dough forms.
  6. Stir in the semi-sweet chocolate chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them a couple of inches apart.
  8. Bake in the preheated oven for about 10-12 minutes, or until the cookies are golden brown around the edges.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
