Ingredients:
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsweetened applesauce
- 1/4 cup light butter or margarine (such as a butter substitute like Smart Balance)
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar substitute (e.g., Splenda or Stevia)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium-sized bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, and salt. Set this dry mixture aside.
- In another bowl, using an electric mixer, beat together the applesauce, light butter or margarine, brown sugar, and granulated sugar substitute until well combined and creamy.
- Add the egg and vanilla extract to the wet mixture and continue to beat until everything is well combined.
- Gradually add the dry mixture to the wet mixture, mixing until a cookie dough forms.
- Stir in the semi-sweet chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them a couple of inches apart.
- Bake in the preheated oven for about 10-12 minutes, or until the cookies are golden brown around the edges.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
