Ingredients:

  • 1 cup graham cracker crumbs (use a low-fat or reduced-fat version)
  • 3 tablespoons unsweetened applesauce

For the Cheesecake Filling:

  • 4 cups fat-free Greek yogurt
  • 4 large eggs
  • 1 cup granulated sugar substitute (like Stevia or Splenda)
  • 1 tablespoon vanilla extract
  • Zest of one lemon (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 325°F (163°C).
  2. Prepare Crust: In a bowl, combine graham cracker crumbs with applesauce. Press the mixture into the bottom of a 9-inch springform pan sprayed with non-stick cooking spray.
  3. Prepare Filling: In a large mixing bowl, whisk together Greek yogurt, eggs, sugar substitute, vanilla extract, and lemon zest (if using) until well combined.
  4. Assemble and Bake: Pour the filling over the crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for about 45-50 minutes or until the center is set.
  5. Cool and Refrigerate: Allow the cheesecake to cool in the oven with the door ajar for about an hour. Then, transfer it to the refrigerator and let it chill for at least 4 hours or overnight.
