🥟 Spinach and Cheese Puff Pastry Hand Pies (WW-Friendly)

Ingredients:

1 sheet of puff pastry, thawed

1 medium white onion, diced

2 blocks of frozen spinach, thawed and drained

1/2 cup low-fat cottage cheese

1/2 cup part-skim mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

1 clove garlic, minced
-
Zest of one lemon

A squeeze of lemon juice

Salt and pepper to taste

A pinch of red pepper flakes (optional)
Instructions:

Preheat your oven to 375°F (190°C).

In a skillet, sauté the diced onion until translucent.

In a mixing bowl, combine the sautéed onion, chopped spinach, lemon zest, lemon juice, cottage cheese, mozzarella cheese, Parmesan cheese, minced garlic, salt, pepper, and red pepper flakes. Mix well until all ingredients are evenly incorporated.

Roll out the puff pastry sheet on a lightly floured surface and cut it into 6 equal squares.

Spoon the spinach and cheese mixture onto one half of each pastry square, leaving a small border around the edges.

Fold the pastry over to form a triangle or rectangle and press the edges with a fork to seal.

Place the hand pies on a baking sheet lined with parchment paper.
