Weight Watchers banana Pudding

Ingredients:

  • 2 large ripe bananas, sliced
  • 1 package (1 ounce) sugar-free, fat-free instant vanilla pudding mix
  • 2 cups skim milk
  • 1 cup non-fat Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 package (about 9 ounces) sugar-free vanilla wafer cookies
  • Light whipped topping (optional)

Instructions:

  1. Prepare Pudding:
    • In a large mixing bowl, combine the instant vanilla pudding mix with skim milk.
    • Whisk until the pudding mix is fully dissolved and the mixture begins to thicken.
    • Add non-fat Greek yogurt and vanilla extract. Continue whisking until smooth and well combined.
  2. Assemble the Pudding:
    • In a serving dish or individual cups, create a layer of sugar-free vanilla wafer cookies.
    • Top the cookies with a layer of sliced bananas.
  3. Layering:
    • Pour a portion of the pudding mixture over the banana and cookie layer.
    • Repeat the layers until all ingredients are used, finishing with a layer of pudding on top.
  4. Chill:
    • Cover the pudding dish with plastic wrap and refrigerate for at least 2-3 hours or until set.
  5. Serve:
    • Optionally, garnish with additional banana slices and a dollop of light whipped topping before serving.
