Ingredients:
- 1 cup shredded cooked chicken breast
- 1/4 cup light cream cheese, softened
- 1/4 cup Greek yogurt
- 2 tablespoons buffalo sauce (adjust to taste)
- 1/4 cup crumbled blue cheese
- 1/4 cup chopped green onions
- 4 whole wheat tortillas (8-inch size)
- 1/2 cup shredded lettuce
Instructions:
- In a mixing bowl, combine shredded chicken, softened cream cheese, Greek yogurt, buffalo sauce, crumbled blue cheese, and chopped green onions. Mix until well combined.
- Lay out the whole wheat tortillas and spread an even layer of the chicken mixture over each tortilla.
- Sprinkle shredded lettuce evenly over the chicken mixture on each tortilla.
- Roll up each tortilla tightly, forming a log shape.
- Place the rolled tortillas in the refrigerator for at least 30 minutes to allow them to set.
- Once set, remove from the refrigerator and slice each rolled tortilla into bite-sized pinwheels.
- Serve the Buffalo Chicken Pinwheels chilled.
