Weight Watchers Buffalo Chicken Pinwheels

Ingredients:

  • 1 cup shredded cooked chicken breast
  • 1/4 cup light cream cheese, softened
  • 1/4 cup Greek yogurt
  • 2 tablespoons buffalo sauce (adjust to taste)
  • 1/4 cup crumbled blue cheese
  • 1/4 cup chopped green onions
  • 4 whole wheat tortillas (8-inch size)
  • 1/2 cup shredded lettuce

Instructions:

  1. In a mixing bowl, combine shredded chicken, softened cream cheese, Greek yogurt, buffalo sauce, crumbled blue cheese, and chopped green onions. Mix until well combined.
  2. Lay out the whole wheat tortillas and spread an even layer of the chicken mixture over each tortilla.
  3. Sprinkle shredded lettuce evenly over the chicken mixture on each tortilla.
  4. Roll up each tortilla tightly, forming a log shape.
  5. Place the rolled tortillas in the refrigerator for at least 30 minutes to allow them to set.
  6. Once set, remove from the refrigerator and slice each rolled tortilla into bite-sized pinwheels.
  7. Serve the Buffalo Chicken Pinwheels chilled.
