Ingredients:
- 1 lb lean ground turkey or lean ground beef
- 1 packet taco seasoning (low-sodium if available)
- 1 cup salsa (choose a lower sugar option)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 can (14 oz) diced tomatoes with green chilies
- 1 medium onion, diced
- 1 bell pepper, diced
- 4 cups low-sodium chicken broth
- 1 cup reduced-fat shredded cheddar cheese
- 1 teaspoon olive oil
- Salt and pepper to taste
- Optional toppings: chopped green onions, cilantro, low-fat sour cream, lime wedges
Instructions:
- Cook Ground Meat:
- In a large pot, heat olive oil over medium heat.
- Add diced onions and bell peppers, sauté until softened.
- Add ground turkey or beef, breaking it up with a spoon, and cook until browned.
- Season and Simmer:
- Sprinkle taco seasoning over the meat and vegetables. Mix well.
- Add salsa, black beans, corn, diced tomatoes with green chilies, and chicken broth. Stir to combine.
- Bring the soup to a simmer and let it cook for 15-20 minutes.
- Add Cheese:
- Stir in shredded cheddar cheese until melted and well combined.
- Season to Taste:
- Season with salt and pepper to taste.
- Serve:
- Ladle the Cheesy Taco Soup into bowls.
- Top with optional toppings such as chopped green onions, cilantro, a dollop of low-fat sour cream, and lime wedges.
