Weight Watchers Cheesy Taco Soup

Ingredients:

  • 1 lb lean ground turkey or lean ground beef
  • 1 packet taco seasoning (low-sodium if available)
  • 1 cup salsa (choose a lower sugar option)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (14 oz) diced tomatoes with green chilies
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 4 cups low-sodium chicken broth
  • 1 cup reduced-fat shredded cheddar cheese
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, cilantro, low-fat sour cream, lime wedges

Instructions:

  1. Cook Ground Meat:
    • In a large pot, heat olive oil over medium heat.
    • Add diced onions and bell peppers, sauté until softened.
    • Add ground turkey or beef, breaking it up with a spoon, and cook until browned.
  2. Season and Simmer:
    • Sprinkle taco seasoning over the meat and vegetables. Mix well.
    • Add salsa, black beans, corn, diced tomatoes with green chilies, and chicken broth. Stir to combine.
    • Bring the soup to a simmer and let it cook for 15-20 minutes.
  3. Add Cheese:
    • Stir in shredded cheddar cheese until melted and well combined.
  4. Season to Taste:
    • Season with salt and pepper to taste.
  5. Serve:
    • Ladle the Cheesy Taco Soup into bowls.
    • Top with optional toppings such as chopped green onions, cilantro, a dollop of low-fat sour cream, and lime wedges.
