Weight Watchers Chocolate Ice Cream

Ingredients:

  • 2 ripe bananas, sliced and frozen
  • 1 cup unsweetened almond milk (or any other milk of your choice)
  • 3 tablespoons unsweetened cocoa powder
  • 1-2 tablespoons powdered sweetener (such as Stevia or monk fruit), adjust to taste
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. Peel and slice the bananas, then place the slices in a single layer on a tray or plate. Freeze for at least 2 hours or until solid.
  2. In a blender or food processor, combine the frozen banana slices, almond milk, cocoa powder, sweetener, vanilla extract, and a pinch of salt.
  3. Blend the ingredients until smooth and creamy. You may need to stop and scrape down the sides of the blender or food processor to ensure everything is well combined.
  4. Taste the mixture and adjust the sweetness if needed by adding more sweetener.
  5. Once the mixture is smooth, transfer it to a lidded container and freeze for at least 4-6 hours or until it reaches your desired ice cream consistency.
  6. Before serving, let the ice cream soften for a few minutes at room temperature to make it easier to scoop.
